3 Easy Ways to Use Asparagus

Asparagus can be a delicious addition to your dinner and a great way to start the year’s harvest.  But there are only so many times you can eat asparagus cooked as a side dish!

Fortunately, asparagus can be fairly versatile.  Cooked asparagus as a side dish is just the beginning of the possibilities.

Here are three easy and delicious ways to use this unique vegetable:

  1. Soup.  Asparagus fits nicely into many soups, especially those with lots of other vegetables.  Just slice it up and toss it in.  It gets very tender if the soup is allowed to cook long enough.  You almost don’t even realize it’s in there.
  2. Stir-fry.  Delicious!  As long as you cut it small enough and cook it long enough, asparagus goes great with meat and other vegetables in a stiry-fry.  Serve over rice or pasta.  This method lets the natural flavor come out nicely.
  3. Scrambled eggs.  Looking for something a little different?  Before cooking the eggs, sauté some minced garlic, chopped onion, and asparagus in butter or bacon fat with a sprinkle of salt and pepper.  Once the vegetables are tender, add beaten eggs and cook.  Good for a change of pace.

As you can see, there’s very little involved with these methods of cooking asparagus.  The most time-consuming part will be the slicing.  The rest is easy.
